Coco’s Mexican Street Corn

Excellent accompaniment to Turkey Chile Rellenos


  • 2 large ears of white corn, cut in half
  • 1/2 cup light mayonnaise
  • 1/2 cup cotija or panella cheese, finely crumbled
  • 1 and 1/2 tsp chili powder
  • 1/4 tsp ground red pepper
  • 1 tsp Kosher salt


Step 1

Steam corn.

Step 2

While corn is steaming, combine mayonnaise, cheese, chili powder, ground red pepper and salt in a bowl.

Step 3

Remove corn from steam basket and while still hot, smother with mayonnaise/cheese sauce.

Mexican street corn is a true delight. Available at merchant carts, on street corners, in Mexican cities and towns, this dish is quite simple to make at home. Goes down well with a beer or really treat yourself and wash it down with a Mexican Coca Cola (or TEQUILA!). If you like it extra spicy, add more ground red pepper.
