Pre-heat oven to 375.
Roast peppers for 40 minutes, turning one-quarter turn every 10 minutes.
Remove peppers from oven and place in covered bowl for 10 minutes.
Remove skin from peppers. Be careful as the peppers are very tender and can easily tear at this point.
Make a small slit (spoon sized) about a 1/4 inch down from the stem.
Using a small spoon, remove as many seeds as possible.
